Executive Chef – Pretoria Central

An executive chef is needed by a hotel in Pretoria to ensure that the institution has an effective and affordable culinary service. The chosen applicant will have a Pretoria CBD address.

Accountabilities:

All food procurement, receiving, storing, issuing, stock taking, stock analysis and control, and stock security procedures must be maintained and under control.


Organize and oversee culinary tasks related to meal preparation.

Create or alter menus that adhere to qualifying requirements.


Calculate the labor and food requirements.


Oversee the activities of the culinary crew.


Make plans for the purchase and/or repair of equipment.


It’s important to always consider cost while buying food or kitchenware.


Verify that the food products are always of the greatest caliber by inspecting each delivery.


Make sure portion control is consistently observed.


Make sure that food reprocessing is actively controlled on a daily basis.


To guarantee proper meal distribution, make sure the front office receives a daily meal/arrivals report.

Requirements:

Finished a Professional Cooking Diploma.


Minimum of Three Years of Experience as a Senior Sous Chef or Head Chef.

The capacity to cooperate and communicate with clients and team members efficiently.


Good familiarity with the plus point system.


Excellent understanding of menu planning and food costs Strong managerial abilities.
